The Devil’s Food Cake Recipe

Food52.com is one of my favorite baking websites the provides amazingly delicious and easy to prepare recipes. One of my favorites is the devil’s food cake with strawberries and chocolate ganache. It is perfect for parties and other occasions. In this article, I will show you how to make it. 

Ingredients

  1. 1 cup of unsalted butter
  2. ¾ cup of dark brown sugar
  3. ¾ cup of granulated sugar
  4. 1 tablespoon of almond extract
  5. 3 eggs at room temp.
  6. ½ of whole milk
  7. ½ cup of freshly brewed hot coffee
  8. 1 ½ cups of all purpose flour
  9. 2 pounds of fresh strawberries
  • The chocolate ganache
  1. 8 ounces of semisweet chocolate chips
  2. ½ of heavy cream
  3. 1 tablespoon of instant granules

Instructions

  1. Preheat the oven to 350. Make sure you prepare two 9 inch cake pans. Grease your pans and line them with baking paper.
  2. Cream the butter until it becomes light and fluffy. Add sugar and beat it for about 2 to 3 minutes until it becomes light and fluffy as well. Beat in with the vanilla and add the eggs at once.
  3. In a small bowl, measure the cocoa and stir it in with the freshly brewed hot coffee until it is fully dissolved. Set it aside for it to cool.
  4. In a larger bowl, sift together flour, salt, and baking powder. Add milk to the cocoa mixture that you prepared earlier. Put your mixer on low speed add flour and the cocoa mixture to the batter. Starting and ending with flour.
  5. Part the batter evenly into the baking pans you prepared. Bake it for 30 to about 40 minutes.
  6. Prepare your chocolate ganache with a double boiler. Heat the chocolate and cream until it completely melts, stir it frequently add the instant coffee, stir until dissolved.
  7. To put the cake together, place one of the cake layers on the serving platter spread ⅓ of the chocolate ganache on the layer and put the sliced strawberries on top. Drizzle the ganache on top of the strawberries. Place the second cake on top. Spread ⅓ of the ganache on the cake then cover with sliced strawberries. Finish up by drizzling the remaining ganache on top.

The devil’s food cake is not the same as regular chocolate cakes because it is richer, darker, and fluffier. It has a robust chocolate flavor, unlike any other chocolate cake. It is sometimes called the chocolate version of the angel food cake. It has been my favorite cake recipe for as long as I can remember. I hope you enjoy this recipe as much as I do.
